Executive Chef Keith Josefiak

Quiet and reserved with impeccable manners and hospitable charm, is how one would describe the Executive Chef of the Old Fort Pub Keith Josefiak. Not exactly the personality you would expect from a chef – least of all one who has rubbed shoulders with the likes of Celebrity Chefs Wolfgang Puck (Spago) and Jimmy Schmidt (The Rattlesnake Club). Chef Keith JosefiakOriginally from the suburbs of Detroit, Michigan, Josefiak started his professional training at the prestigious Culinary Institute of America in 1982. After graduation, he continued his training working at Five Star hotels in Lake Tahoe, Nevada and Honolulu, Hawaii. Upon returning to Michigan in the early eighties, he was hired at the London Chop House then under the direction of celebrated chef Jimmy Schmidt. Josefiak spent the next twelve years working with Mr. Schmidt opening the world acclaimed RattleSnake Club restaurants in Denver and Detroit, as well as the Adirondacks in Washington D.C. in the historic Union Station. In 1995 he was personally invited to attend the School for American Chefs at Beringer Vineyards to study wine and food chemistry. Relocating soon after to Hilton Head Island, South Carolina, Josefiak became co-owner, creator and Executive Chef of Starfire Bistro and Starfire Wine Bar & Grill until 2001. Josefiak has been the Executive Chef at the Old Fort Pub since late 2005 teaching staff, mentoring students and inspiring guests. The Old Fort Pub has earned the prestigious AAA Four Diamond award along with the Wine Spectator Award of Excellence annually.
